Madurai, in the deep South of Tamil Nadu, is known for its magnificent temple, its jasmine that makes its way to French perfume houses and, of course, its earthy, rustic, utterly delicious food. Here are the must-have dishes to eat when in Madurai:

Bun Parota: These soft, flaky parathas are one of Madurai’s most-loved foods. Piles are eaten with Salna, a spicy gravy, and with non-veg ‘sides’. Try these in the many roadside stalls that come to life in the evenings and keep tossing up hot parotas through the night.

Kari Dosai: Madurai claims to make the best version of these savoury dosas topped with egg and spicy mutton. The Konar Kadai in Simmakkal is famous for its kari dosai which has earned the place on food shows on TV.

Halva: Though Tirunelveli is instantly associated with halva, this is one of Madurai’s favourite sweets. Halva is best eaten straight out of the karhai, hot and glistening with ghee. Try the fare at the Nagapattinam Halva Kadai in the shadow of the Meenakshi temple and at the Prema Vilas outlets.

Bajji-Vadai: These deep-fried snacks are synonymous with tiffin time in Madurai. Don’t go to fancy places. The hottest, crispest, freshest bajjis and medu vadas are available in street food outlets across the city.

Jigarthanda: Its name means to cool the heart. Jigarthanda is Madurai’s signature drink made with thickened milk, almond resin, nannari syrup and often topped with ice cream. Famous Jigarthanda claims to be the creator of this cooler and still makes the best.
