Description
Cafe TBQ is an expansion of the ‘tasallibaQsh’ (TBQ) concept from Gurgaon to Leh. TBQ is our take on what good food is and an exploration of what Indian food is really all about...not based on recipes but rather on the availability of produce and the methods evolved to process that produce that suited the needs of the time and place. An important element that we are exploring is the under representation of mountain cuisines in Indian food and trying to develop a cuisine inclusive of all regions, produce, methods and eating habits. The quality of produce is of primary significance at TBQ and the reason for setting up a seasonal eatery in Leh, Ladakh where the growing season is short but the soil and conditions are perfect for a healthy harvest of fruits and vegetables. That coupled with the availability of some of the best meat in the country from mountain goats provides us the perfect incentive to setup a food lab here.
